My husband and I go to the San Clemente Farmer’s Market almost every Sunday. Although there are a lot of farmer’s markets near us, we go to this one because it’s one of the few that allow dogs. It’s no fun for us to go to the other farmer’s markets because then my husband has to wait outside with Mambo while I run in and quickly pick up some fresh goodies.

At the San Clemente Farmer’s Market, however; we can take our time looking at all the booths and tasting the fresh produce. My favorite part is the tasting! And I especially love it this time of year because berries are in season. One bite of a berry, any kind of berry, and I’m forking out some cash.

We’ve been coming home from the farmer’s market with baskets and baskets of berries for the past couple of weeks. It’s been wonderful to have fresh berries on our morning cereal, but now I want to start using them to make some healthy desserts.

I did some digging and found several tempting, yet healthy, vegan berry dessert recipes that I plan to make soon.

Vegan Blueberry Cardamom Cheesecake

These lovely purple cheesecakes were created by Heather from Sweetly Raw. I have no doubt that they taste just as good as they look because Heather is not only a classically trained chef, but she also owns a raw vegan dessert business. You go Heather!

Strawberry Ice Cream

This creamy dreamy strawberry ice cream from Foods For Long Life has no sugar and only 73 calories per serving. I’m so tempted by this photo that I just might have to buy an ice cream maker!

Fresh Raspberry Sauce

This fresh no sugar added sauce would be a perfect topping for So Delicious Coconut Milk Ice Cream or any non-dairy ice cream for that matter. You can find the recipe at Healthy. Happy. Life.

Strawberry-Blueberry Tapioca Parfaits

Since going vegan, I’ve used a lot of recipes from Susan Voisin’s Fat Free Vegan Kitchen. What I love about her recipes is that like me, she’s opposed to extracted oil. These sweet patriotic treats are the latest recipe I found on her site.

  1. you can make a quick strawberry ‘ice cream’ with frozen bananas and frozen strawberries, splash of vanilla, and some unsweetened ‘milk’ (not much). Blend in your vitamix and you have instant ice cream! No ice cream maker needed! 🙂

    Also – a fun thing to do with berries is make a pudding. Berries have high levels of pectin which will ‘set’ your pudding like a gel. Just take a mixture of your favorite berries (blueberries, black berries, strawberries, etc), blend with no water – just the berries and pour into little cups and set in the fridge. They will set up like a gel/pudding and you have an yummy berry treat. Top with a dollop of coconut ‘whipped cream’ (take a can of NOT lite coconut milk, open and skim off the cream. Blend in a high speed blender until whipped, with a bit of vanilla and 1 date if you want to sweeten it a bit more.)

    Easy treats! And tomorrow (May 31) make sure you go to your local Whole Foods Market to pick up your blueberries – they are having a 1 day sale for $1.99/lb (usually $5.99 or $6.99)! Stock up!

    It’s just as well I’m planning some sweet potato baking experimentation tonight to satisfy my sweet cravings!

    I too love the Fat Free Vegan Kitchen blog, I think I’ve bookmarked pretty much every recipe! Have you ever tried berries in a salad? I recently discovered that I love strawberries with spinach salad after seeing it in a few places, it really worked! 🙂

      I just had a spinach salad with strawberries in it for lunch! Yum, it definitely does work well together.

    • Hi Poppy! I’m the queen of fruity salads! I almost always put fruit in my dinner salads. Strawberries in a spinach salad is one of my faves, but I also like blueberries, apple and mango in salads. Mango in a Mexican-style salad is another one of my favorites!!         Yum, I love the sound of Mango Mexican salad! I need to try more variations – I am still a fruity salad virgin! 🙂

    • You’ve got to try a Mexican salad with mangos Poppy – it’s soooo delicious. Here’s what I typically put in mine: lettuce, quinoa, kidney or black beans, tomatoes, red or green onion, corn, sunflower seeds, mango and a few crunched tortilla chips. I typically mix this with a dressing made out of avocado like this one on Veg Web: http://vegweb.com/recipes/creamy-avocado-dressing. Other times I just top it with guacamole and or salsa. This salad is also wonderful with a vegan version of taco meat. I serve the salad as a main course with whole grain tortillas that I slice into strips with a pizza cutter and bake until they’re crispy. I need to write a post on this salad, and I will once I figure out how to use my new camera and can take a nice photo of it. Celeste 🙂

        Celeste you are a diamond, I am so going to try this tomorrow, all I need is avocado and mango! I made some vegan meatballs with half a tin of kidney beans for dinner today so I can use the other half of the can in the salad! I love the idea of crunched tortilla chips as well.
