    • Thank you so much for visiting, for your comments and following – I really appreciate it! As far as judgment, who am I to judge. I ate meat for most of my life, and if any vegan ever judged me for it I would have just ignored them and avoided them in the future. Judgment alienates, and I want to make friends!! Celeste 🙂

    • Thanks so much for popping by Nelly! I hear you with struggling to have fun with flavours from plants. I struggled and made a lot of crappy dinners when I first went plant based. I make wonderful, flavorful meals now, however. It’s just a learning process. And it’s hard at first because cooking plant-based (or in your case, pesctarian), is not the norm in our society. So we didn’t learn how to do it while growing up, we don’t see how to cook this way on cooking shows, and unless you buy specialty cookbooks you don’t see recipes for cooking this way. Let me tell you, however; it is a tasty way to eat once you get used to it. Good luck! Celeste 🙂

    So glad we’ve connected. You’ve got a great blog here. Ok, here’s a question for you…how would you handle one person starting on a Vegan diet (me), and the husband being a meat lover who would never ever change that (he’s diabetic and is so disciplined in that way of eating and has great blood sugars that are always well controlled, so I would never consider asking him to also go Vegan). How does one handle a two type of diet household?
    Now I’m off to look at all your recipes.

    • Thanks for your thoughtful comment Angeline (and for the follow too!). As far as your question – you’ve got me stumped. I was fortunate that my husband and I decided to go vegan together so I didn’t have to deal with that. My tongue-in-cheek answer would be that you’d handle it by doing a lot of cooking – hehe!

      Although I can’t help you with that, I do want to mention something that you may already know. A vegan diet has been shown to cure diabetes. I realize that your husband is a meat-lover and that he’s got his diabetes controlled, but just thought I’d put that out there.

        Thanks for that link. I’ll take a look. I’m deciding on it because I was just found to have high blood pressure and started on a mild diutetic to see how that works. I also cant seem to lose the about 15 or so pounds I think I should lose even though I eat small portions and never eat fast food or junk food. I’ve picked up my walking more just recently and still seem to be stuck. I am planning to start with vegan breakfasts and lunches and go light on meat at dinner when hubby is around.

    • My husband and I first went plant-based because my husband had high blood pressure and high cholesterol. Within two months on this diet, his levels were down to normal. And we both lost weight too! We follow the diet from Esselstyn’s Engine 2 Diet, which means that in addition to no meat or dairy we don’t do extracted oil or sugar (we’re not strict about this, however). We only did it Monday – Friday when we first started because we didn’t think we could handle doing it all the time. Once we got used to eating this way, however; we actually liked it better than how we were eating before and started doing it all the time. I’ll admit that it was a challenge at first. We cheated A LOT the first few months. Anyway, more power to you! And I’m here if you need support. 🙂

        Being a vegetarian is always an interesting journey, but being one in South America is a particular challenge, since the diet, and mindset, is definitely meat-centered. But I’ve been in South America for almost 20 years and I’ve stuck to my diet all this time. I see people around me getting sick and having so many health problems, whereas I have very few. It’s just one of the many benefits of mindful eating.

        I look forward to learning from you, too. Here in Colombia I don’t run into many vegans, so it’s good that we can be in contact.

    • Hey there Liv! That’s exciting that you’re considering going vegan! I was in your shoes two years ago and I’m so glad I made the transition. I love being vegan – I look and feel so much better eating this way. Still, it’s a BIG transition and there’s a lot to consider. Cost is one such issue.

      I know that it’s possible to eat vegan on a budget, but it takes some planning in the beginning until you get used to knowing what to cook and eat. You can make a lot of easy, delicious and cheap vegan Mexican meals. Beans are a really cheap source of protein and you can use them to make budget-friendly burritos, tostadas and Mexican casseroles. Soups are also really cheap. During the winter my husband and I often have just a bowl of soup with bread for dinner and it keeps us satisfied.

      The transition can be overwhelming in the beginning, so you might want to try making just one cheap vegan dish a week until you find a few recipes you like. Then maybe start making two a week. Or you can come up with some other plan that works for you. My husband and I started out by just eating vegan just Monday through Friday and this helped us to make the transition.
