If you read my earlier post Vegan Chocolate Valentine’s Gifts, you know I got my hubby chocolates for Valentine’s Day. I slipped on our Plant-Strong Diet with that one, but it was just a little white slip. I swear! Okay, I admit it wasn’t the healthiest choice, but armed with these 10 awesome Valentine salad, dinner, drink and dessert recipes I’m gonna make the rest of our V-day super healthy. Here’s what I found:
1. My Heart Beets for You Salad
My Heart Beets for You Salad is a fun recipe for Valentine’s Day. It is visually appealing and offers some vegetables that might not show up on the table on a regular basis.
2. Cheery Cherry Kale Salad
This Cheery Cherry Kale Salad is my favorite salad and it would be lovely for a Valentine’s Day meal. If you can’t find fresh cherry’s, dried are a fine replacement.
3. An Avocado Valentine
This Avocado Valentine is (surprise, surprise) the creation of the wife of a California avocado farmer. Isn’t this fun?
4. Vegan Valentine Bento Box
Send someone special to work or school with this lovely Vegan Valentine Bento Box.
5. Hearty Ravioli
This Hearty Ravioli (hearty – hehe) is a low-fat, healthy but oh-so-romantic dish to serve for Valentine’s Day.
6. Valentine’s Veggie Pot Pie
If the weather’s cold on Valentine’s Day, comfort your sweetheart with this Valentine’s Veggie Pot Pie.
7. Pomegranate Heart Ice Cubes
Pomegranate Heart Ice Cubes are a cool way to turn a drink into a special Valentine’s Day treat.
8. Fudge Cherry Bursts
Who says being healthy means you have to skimp on a Valentine’s Day dessert? You don’t if you make these amazing raw Fudge Cherry Bursts.
9. Raw Carrot Cake and Cream Cheese Hearts
I love these sugar and gluten-free Raw Carrot Cake and Cream Cheese Hearts (vegan cream cheese, of course!) from An Unrefined Vegan.
10. Red Velvet Brownies
Or maybe your sweetheart would prefer Red Velvet Brownies for a Valentine’s Day dessert.
11. Raw White Chocolate & Strawberry Marbled ‘Ice Cream’ Cake
I know I said this was a top 10 list, but I ran across this luscious Marbled ‘Ice Cream’ Cake and had to add it to my round up (I rarely follow the rules anyway – hehe).

Ummmm, looks so yummy. And nice and health, especially the kale cherry salad. I don’t get cherries here (real bummer). I remember though that I was in Walmart when I was pregnant with my girl and I found a small bag of them for $R5 Br (about 2.50 usd at the time). I was so excited and bought them. When I went back for more, they had gone up to $R15 Br (7.50 usd). I think the first time I got them someone made a mistake on the price. Good for me =).
I also really love the pomegranate ice cubes. So cute.

No cherries? Oh my, that is a bummer!!! About the price change on the cherries, they might have really changed like that. I had a similar experience with cherries from Whole Foods. I bought them one week and they were so good that I bought them again the next week and was shocked at how much they’d gone up in price. And a happy Valentine’s Day to you too. Actually, Brazil’s Valentine’s Day is on June 12th. I’ve already reminded my hubby though that the North American one is coming up. And just one day before he travels for two weeks.
Interesting, cherries went up drastically there too. Hmm. Maybe it’s some type of conspiracy? (joking)

Hey Sophia! Sorry I’m late getting back to you on this. I do have an idea, but only if sunflower seeds are not considered nuts. I made healthy vegan rice crispy treats awhile back and they were delish. They do have sunflower seed butter in them, however; so I don’t know if that works. Here’s the link in case you’re interested: http://www.healthfulpursuit.com/2012/06/5-ingredient-vegan-rice-crispy-treats/#comment-75607 I’ve made these with and without the flax seeds, and I don’t think it needs them. I will also say that these taste more like granola bars than rice crispy treats, so if you want them sweeter I’d add some dried fruit or chocolate chips. Hope this helps! Celeste 🙂
