If you read my earlier post Vegan Chocolate Valentine’s Gifts, you know I got my hubby chocolates for Valentine’s Day. I slipped on our Plant-Strong Diet with that one, but it was just a little white slip. I swear! Okay, I admit it wasn’t the healthiest choice, but armed with these 10 awesome Valentine salad, dinner, drink and dessert recipes I’m gonna make the rest of our V-day super healthy. Here’s what I found:
1. My Heart Beets for You Salad
My Heart Beets for You Salad is a fun recipe for Valentine’s Day. It is visually appealing and offers some vegetables that might not show up on the table on a regular basis.
2. Cheery Cherry Kale Salad
This Cheery Cherry Kale Salad is my favorite salad and it would be lovely for a Valentine’s Day meal. If you can’t find fresh cherry’s, dried are a fine replacement.
3. An Avocado Valentine
This Avocado Valentine is (surprise, surprise) the creation of the wife of a California avocado farmer. Isn’t this fun?
4. Vegan Valentine Bento Box
Send someone special to work or school with this lovely Vegan Valentine Bento Box.
5. Hearty Ravioli
This Hearty Ravioli (hearty – hehe) is a low-fat, healthy but oh-so-romantic dish to serve for Valentine’s Day.
6. Valentine’s Veggie Pot Pie
If the weather’s cold on Valentine’s Day, comfort your sweetheart with this Valentine’s Veggie Pot Pie.
7. Pomegranate Heart Ice Cubes
Pomegranate Heart Ice Cubes are a cool way to turn a drink into a special Valentine’s Day treat.
8. Fudge Cherry Bursts
Who says being healthy means you have to skimp on a Valentine’s Day dessert? You don’t if you make these amazing raw Fudge Cherry Bursts.
9. Raw Carrot Cake and Cream Cheese Hearts
I love these sugar and gluten-free Raw Carrot Cake and Cream Cheese Hearts (vegan cream cheese, of course!) from An Unrefined Vegan.
10. Red Velvet Brownies
Or maybe your sweetheart would prefer Red Velvet Brownies for a Valentine’s Day dessert.
11. Raw White Chocolate & Strawberry Marbled ‘Ice Cream’ Cake
I know I said this was a top 10 list, but I ran across this luscious Marbled ‘Ice Cream’ Cake and had to add it to my round up (I rarely follow the rules anyway – hehe).
Wishing you all a happy Valentine’s Day!

You have a great blog and I truly enjoy being a follower of yours!
It’s a pleasure to hear from you Nadyne! I’m also glad that you commented on a post where I actually took one of the photos (the Cheery Cherry Kale Salad is my recipe and photo). I’m still not taking as many of my own photos as I would like, but one of these days I plan to take another class from you to inspire me. Thank you SO much for your thoughtful words and for following me – it means a lot! Celeste 🙂

You’re certainly not alone in being alone! I’ve been there, and it just means that you’ve got lots of love and romance to look forward to in the future. Celeste 🙂
Ummmm, looks so yummy. And nice and health, especially the kale cherry salad. I don’t get cherries here (real bummer). I remember though that I was in Walmart when I was pregnant with my girl and I found a small bag of them for $R5 Br (about 2.50 usd at the time). I was so excited and bought them. When I went back for more, they had gone up to $R15 Br (7.50 usd). I think the first time I got them someone made a mistake on the price. Good for me =).
I also really love the pomegranate ice cubes. So cute.
Blessings Celeste =)
No cherries? Oh my, that is a bummer!!! About the price change on the cherries, they might have really changed like that. I had a similar experience with cherries from Whole Foods. I bought them one week and they were so good that I bought them again the next week and was shocked at how much they’d gone up in price. Maybe they’re just one of those foods that change in price like that – I don’t know. Anywho, thanks so much for reading chica!!! Have a wonderful Valentine’s Day. Celeste 🙂
And a happy Valentine’s Day to you too. Actually, Brazil’s Valentine’s Day is on June 12th. I’ve already reminded my hubby though that the North American one is coming up. And just one day before he travels for two weeks.
Interesting, cherries went up drastically there too. Hmm. Maybe it’s some type of conspiracy? (joking)
Have a great one Celeste =)
You’ve talked your hubby into celebrating two Valentine’s Days (hehe – you sneak!). Maybe I should see if I can get away with that (I doubt my cheap hubby will go for it, however).
Hahahaha. Yes, let’s see if it really does happen though. I have a sneaking suspicion that the Brazilian Valentine’s Day will be celebrated at a much higher level than the North American one. =(
But one can try, right.
Great ideas! I ❤ the pomegranate heart ice cubes especially!
Thanks SO much for stopping by Amy – I appreciate it! Celeste 🙂
They are all very cute, tasty & amazing! A few of them, I already made! x
Always a pleasure to hear from you Sophie!!! 🙂
What a great round up! I wouldn’t be able to choose between all these pretty dishes, that ravioli? And the ice cubes? And how cute is that avocado on toast?!
I hope you have a great Valentine’s Celeste ❤
Hey there Poppy! Thanks so much for reading chica and a very, very happy Valentine’s Day to you! Celeste 🙂

Hi Celeste 😀 I love every one of these ideas for Valentine’s Day even the kale. Well, it’s Valentine week isn’t it ? 😀 Ralph xox 😀
Kale, kale, kale – hehe!! Yes, it is Valentine’s Day week and I think you’re getting showered with more love notes than I am. I saw your Valentine’s Day card stash, you dog! 😉
I am in the process of writing 2 massive posts for Valentine’s Day. Up to today I have 11 cards & 6 e-cards. Woof ! 😉 Come on over on V day and I’ll take you out for the day in one post 😉 xox
The red velvet brownies look very yummy. Have you made them?
I haven’t tried that recipe yet. I’ve made brownies with beans (which were amazing!), but never one with beets. The photos made them look really good, however. Let me know if you try them – I’d love to hear how they turn out. Happy Valentine’s Day chica! Celeste 🙂
It’s girl’s nite on Saturday. May have to make something chocolate to go with the wine.
What a sweet collection, Celeste! Happy Valentine’s Day to you, too. Gotta try that cherry kale salad…. 🙂
Ooh, you’ll love that cherry kale salad Sophia!!! And thanks so much for popping by chica – I always love hearing from you! Celeste 🙂
My pleasure 🙂
Trying to find kid-friendly treats to bring to my son’s daycare on Friday! Need to be vegan and nut-free. Any suggestions? Would love to hear them… 🙂
Hey Sophia! Sorry I’m late getting back to you on this. I do have an idea, but only if sunflower seeds are not considered nuts. I made healthy vegan rice crispy treats awhile back and they were delish. They do have sunflower seed butter in them, however; so I don’t know if that works. Here’s the link in case you’re interested: http://www.healthfulpursuit.com/2012/06/5-ingredient-vegan-rice-crispy-treats/#comment-75607 I’ve made these with and without the flax seeds, and I don’t think it needs them. I will also say that these taste more like granola bars than rice crispy treats, so if you want them sweeter I’d add some dried fruit or chocolate chips. Hope this helps! Celeste 🙂
You saved me! I was going for ‘butter’ cookies, but wasn’t so crazy about the idea. These were great, Celeste! Thanks so much for sharing it with me. Happy Valentine’s Day!
Thanks, Celeste, for including my Valentine’s Vegetable Pot Pie recipe–I’m honored!
