How to Make Coconut Milk Whipped Cream

One good thing came out of yesterday’s pity party; I discovered that you can make delicious whipped cream out of coconut milk. If you didn’t read my pity party post, basically no one showed up to a dessert party I planned, so I gorged on chocolate cake while feeling sorry for myself.

The cake I made was my friend, Katherine’s The Most Delicious Healthy Chocolate Cake EVER! It was supposed to have a cashew cream frosting, but I didn’t have cashews, so I tried turning coconut milk into whipped cream.

It worked! What’s more, it was the most heavenly whipped cream I’ve ever tasted. I added a little sugar to mine, but honestly it tasted fine without it. Here’s how you make it:

Coconut Milk Whipped Cream

Ingredients

1 can full-fat canned coconut milk, chilled overnight

1 to 2 tablespoons powdered sugar or other sweetener (optional)

½ teaspoon of vanilla or coconut extract

Directions

Open the chilled can of coconut milk and scoop the solid part into a bowl (save the coconut water to use in smoothies). Beat with a mixer on medium speed for two minutes. Add sugar and extract and continue beating until soft peaks form. How easy is that!

Not that you’ll have any leftover, but if you do it will only keep until the next day and will need to be whipped again before serving.

Update!

I tried to replicate my recipe the other night and this time it didn’t work, so I’ve updated the recipe with help from Oh Lady Cakes. Now I just us the fatty layer of coconut milk which seems to work more consistently.

Notes: Emma from Coconut and Berries uses coconut sugar that she grinds in a blender as a sweetener. I like this idea! And Poppy from Poppy’s Patisserie tells me you can add coconut flour to make it hold better. Poppy says you only need a tiny bit, so add 1/2 teaspoon at a time until you get the hold you want. Thanks Poppy!

  10. I keep meaning to try this – thanks for the reminder. With some fresh berries and maybe a little dark chocolate, it would be an easy, decadent and healthy dessert.

    Regarding your dessert party, sorry that happened. Your friends must not be regular readers of your blog or they’d know what they’d be missing dessert-wise. On the bright side (always good to at least try to look for one in a bad situation), at least you had a delicious, healthy chocolate cake waiting to be devoured in your time of need. Hey, sometimes we women need a good cathartic cry or a self-hosted pity party so we can venture on with gusto! 🙂

    • Some of my party guests do read my blog, but I’m not sure how regularly. I wonder if any of them read my pity party post. Actually, I hope not! I found out they all had good excuses, and the pity party was more about me than them anyway. And you’re right, sometimes it feels good to have a cathartic cry, especially when chocolate is involved!

    Oh Celeste, as usual this recipe is so, so dangerous!!!!!! But certainly a welcomed recipe. In university, after a long night out my roommates and I would roll out of bed and go for brunch where I would usually order some pancakes that came with homemade creme fraiche and fresh fruit… I miss creme fraiche A LOT, but I refrain from eating dairy (too mucous forming).. can’t wait to try out this coconut whipped cream! yum!

    • I agree that this is a dangerous recipe!! It’s not the kind of thing I plan to make often, mostly for company. Still, it’s a lot healthier than other whipped toppings. And happy Thanksgiving to you too!! Celeste 🙂

    • Absolutely!! Also, Poppy shared a trick with me. She tells me that you can add a tiny bit of coconut flour, about half a teaspoon, to make it hold better. I haven’t tried this, but if it’s coming from Poppy I’m sure it works! Happy blending! Celeste 🙂

    I was wondering if there’s a version of vegan whipped cream that doesn’t re-solidify upon refrigeration. In particular, (I am not a vegan) there is a cheesecake I really like which uses whipping cream mixed in with the cream cheese to give the cheesecake a fluffiness not present in other cheesecakes. My friend is vegan, and I want her to be able to try something similar, however I can’t find a recipe for whipped cream online that doesn’t re-solidify once chilled (which is a problem for this cake). Do you have any suggestions for a fluffy whipped cream that will mix well with the typical coconut oil/milk and not harden upon refrigeration? Thanks!

    • Thanks so much for your question! Unfortunately, I don’t have a great answer for you. I’ve only made coconut milk whipped cream twice now, so I don’t have a lot of experience with it. My blogger friend, Poppy from Bunny Kitchen, however; does a lot more baking and goodie making than I do. I bet she’d be able to help you out with this.
