One good thing came out of yesterday’s pity party; I discovered that you can make delicious whipped cream out of coconut milk. If you didn’t read my pity party post, basically no one showed up to a dessert party I planned, so I gorged on chocolate cake while feeling sorry for myself.
The cake I made was my friend, Katherine’s The Most Delicious Healthy Chocolate Cake EVER! It was supposed to have a cashew cream frosting, but I didn’t have cashews, so I tried turning coconut milk into whipped cream.
It worked! What’s more, it was the most heavenly whipped cream I’ve ever tasted. I added a little sugar to mine, but honestly it tasted fine without it. Here’s how you make it:
Coconut Milk Whipped Cream
Ingredients
1 can full-fat canned coconut milk, chilled overnight
1 to 2 tablespoons powdered sugar or other sweetener (optional)
½ teaspoon of vanilla or coconut extract
Directions
Open the chilled can of coconut milk and scoop the solid part into a bowl (save the coconut water to use in smoothies). Beat with a mixer on medium speed for two minutes. Add sugar and extract and continue beating until soft peaks form. How easy is that!
Not that you’ll have any leftover, but if you do it will only keep until the next day and will need to be whipped again before serving.
Update!
I tried to replicate my recipe the other night and this time it didn’t work, so I’ve updated the recipe with help from Oh Lady Cakes. Now I just us the fatty layer of coconut milk which seems to work more consistently.
Notes: Emma from Coconut and Berries uses coconut sugar that she grinds in a blender as a sweetener. I like this idea! And Poppy from Poppy’s Patisserie tells me you can add coconut flour to make it hold better. Poppy says you only need a tiny bit, so add 1/2 teaspoon at a time until you get the hold you want. Thanks Poppy!

I will have to try this. I would some cinnamon and lemon zest to that recipe.
Cinnamon and lemon zest would give it an interesting flavor. Maybe I’ll try that the next time I make it. Thanks for stopping by Ivonne! Celeste 🙂
p.s. what kind of cocnut mild was it?
It was full fat canned coconut milk. Thanks for asking, I’ll clarify this in the directions. 🙂
Good morning, you’re up early! It’s nearly 6am here in BsAs. I’ve tried making whipped cream with canned coconut milk and it was pretty fun!
Hehe, I just got up! I actually scheduled the post so I wasn’t up when it got posted. That’s cool that you’ve made this before, it’s so easy! Celeste 🙂
I never knew you could whip coconut milk. What a great idea – thanks for sharing! – Mike
I never knew either!! I was just experimenting and it just happened to work. Hope all is well with you Mike! Celeste 🙂
I dub you the Whipped Queen of Innovation! There appears to be no limit to what you can do!
Haha – you’re such a sweetheart!
Love coconut whipped cream, so rich but still so nutritious! xx
I know! I’m so glad I discovered it!! Celeste 🙂
I’ve heard of this, and tasted it once in a cafe. Such a great idea! Is there anything coconut can’t do?!
Hehe – coconuts have sure become one of my fave foods since going vegan. I’ll be making this whipped cream a lot with the holidays coming up. Celeste 🙂
LOVE this stuff.
Me too!!
Awesome! So easy as well!
Super easy! Maybe too easy, I can see myself making this A LOT from now on. It might be healthful, but it’s still a high-fat treat. Celeste 🙂
I hear you! 🙂
WoW!! I must try this to put on my pumpkin pie for my Thanksgiving dinner tonight…Cool!!
Wonderful!! Your guests will be surprised at the taste – I hope everyone loves it! Celeste 🙂
Reblogged this on Stop the Stigma with Cher Shares and commented:
A nutritious treat as a dessert?!!! Wow!! Bonus!!! Coconut Milk Whipped Cream….will try this on my pumpkin pie at my Thanksgiving dinner tonight….Happy Thanksgiving!!
Thanks so much for the reblog Cheryl – I really appreciate it!!! Enjoy and happy Thanksgiving! Celeste 🙂
I keep meaning to try this – thanks for the reminder. With some fresh berries and maybe a little dark chocolate, it would be an easy, decadent and healthy dessert.
Regarding your dessert party, sorry that happened. Your friends must not be regular readers of your blog or they’d know what they’d be missing dessert-wise. On the bright side (always good to at least try to look for one in a bad situation), at least you had a delicious, healthy chocolate cake waiting to be devoured in your time of need. Hey, sometimes we women need a good cathartic cry or a self-hosted pity party so we can venture on with gusto! 🙂
Some of my party guests do read my blog, but I’m not sure how regularly. I wonder if any of them read my pity party post. Actually, I hope not! I found out they all had good excuses, and the pity party was more about me than them anyway. And you’re right, sometimes it feels good to have a cathartic cry, especially when chocolate is involved!
Do try the coconut whipped cream Cowgirl – it was sooooo good!
I would have gone. Did you invite vegans?
Most of my party guests were not vegans, and I’m wondering if that had anything to do with it. I think some people are afraid to eat stuff that I make because they assume it’s going to taste like healthy crap. Unfortunately, besides people I know from blogging, I don’t know many vegans. Celeste 🙂
me…..me….me…….hands raised, waving frantically 🙂
I love coconut whipped cream too. I grind coconut sugar in my spice grinder/blender and use it instead of powdered sugar 🙂
Oh, I love the idea of using coconut sugar!! Thanks for sharing that – I’ll try it next time. Celeste 🙂
oh yes ,
Oh yes is right on!
Oh Celeste, as usual this recipe is so, so dangerous!!!!!! But certainly a welcomed recipe. In university, after a long night out my roommates and I would roll out of bed and go for brunch where I would usually order some pancakes that came with homemade creme fraiche and fresh fruit… I miss creme fraiche A LOT, but I refrain from eating dairy (too mucous forming).. can’t wait to try out this coconut whipped cream! yum!
PS happy (canadian) thanksgiving!
Kasia
I agree that this is a dangerous recipe!! It’s not the kind of thing I plan to make often, mostly for company. Still, it’s a lot healthier than other whipped toppings. And happy Thanksgiving to you too!! Celeste 🙂
Yum I love coconut whipped cream! Sometimes I add a little coconut flour so that it holds better, it’s good for when your filling cakes or something so that it stays in place! 😀 I’m sorry about your party 😦 I would have come if I wasn’t half the world away 🙂
Thanks for the coconut flour tip Poppy! I’ll try that next time. I would have loved for you to have come to my party chica!! Someday… 🙂
You only need a tiny bit, add about half a tsp at a time until you get the hold you want. Yes, someday!! 😀
Oh thanks Poppy! I’m going to add that as a note on this post! Celeste 🙂
Awesome work here Celeste:).
I am so glad that I started blogging. It surely is helping me in rediscovering the word “food”.
Thanks Sonal! I’ve learned so much about food from blogging too!! I never dreamed there were so many healthy and tasty ways to cook before I started blogging. Cheers to blogging! Celeste 🙂
🙂
Wow I love easy things like this! Thanks Celeste 🙂
I like easy stuff too, and it doesn’t get easier than this recipe!!
Wow! How awesome is that! 🙂 Now I have a reason to get an electric whisk/beater!
No electric mixer???? Yes, I think it’s time girlfriend! Celeste 🙂
I totally get what you mean. I loathe it when people say they are coming and then fail to show up. It is an unfortunate fact of life- and we take it personal.
I guess we’ve all been through that at one time or another! Thanks so much for your comment and support – I really appreciate it! Celeste 🙂
Oh how delicious! I must try this some time!
Please do – I know you’ll love it! Celeste 🙂
Very cool! I will definitely give this a try 🙂
Wonderful! I know you’ll love it! Celeste 🙂
Sorry to hear about your party but glad there was a positive. This sounds absolutely delicious, I’ll need to add it to my (ever growing) list of things to try 🙂
There’s just not enough hours in the day!! 🙂
Ahh Celeste how could no one show up to your desert party. I wish I was closer I am in love with all deserts :-). I hope you have a great week. The desertaholic in NY
Aw thanks for your kind thoughts! I’ve spoken to all of my friends and they had good excuses, so all is forgiven. It’s too bad you’re so far away, I’d love to share a chocolate cake with you!! Celeste 🙂
Thank you so much for tying this and sharing! Can’t wait to try it out 🙂
Wonderful! I hope you like it!
Traditional whipped cream bothers Dad, so we’ll have to try this! Woof!
This will be a nice treat for Dad for sure!!
How divine to know, thanks Celeste.
Nice!! Do you think it would hold up in say, vegan hot chocolate? 🙂
Absolutely!! Also, Poppy shared a trick with me. She tells me that you can add a tiny bit of coconut flour, about half a teaspoon, to make it hold better. I haven’t tried this, but if it’s coming from Poppy I’m sure it works! Happy blending! Celeste 🙂
I had always seen it done with just the chilled cream at the top! Had no idea you could use the whole can? Sorry to hear about your party! Planning things always stresses me out b/c my secret fear is for them to fail! I’m sure your food was delish!
Maybe using the chilled cream at the top is how you’re “supposed” to do it – haha! In any case, it worked like a charm with the whole can. And thanks so much for your support for my pity party. I know we all have days like that – such is life! Have a lovely week! Celeste 🙂
this post is the creme de la creme!! (doh–I couldn’t resist) I am super happy to have found this–I use coconut milk a lot, and love whip cream ( a super guilty pleasure, when I do indulge) and now i can have the best of all worlds. For the cloven, as well. 🙂
sharing to fuhbeebs…
Crème de la crème – I love it!! I hope you try this simple recipe – it really is amazingly delicious! Thanks for stopping by!
This sounds brilliant Celeste! I shall give it a try. 😀
Please do Fae – it’s lovely!! Oh, and nice to hear from you!! I always appreciate your comments. Celeste 🙂
I’ve recently discovered coconut whipped cream, and will need to use this to convert my mum to non-dairy! I’m glad it’s really as easy as it sounds!
Yes, it’s super simple!!! I think it would be fun to make it and top a yummy dessert and to not tell her it’s vegan until after she tastes it – hehe! I’d love to hear what your mom thinks of it!! Celeste 🙂
Celeste! I agree, it’s heavenly! Yes, I do this all the time! I have a coconut molasses cream frosting recipe on my blog as well as a double chocolate whipped cream which is to die for! You should try it 🙂 here: http://thevegan8.com/frostings-icings-2/
Wow – just checked out your double chocolate whipped cream and it looked soooo good I had to tweet it! I’ll certainly give that recipe a try = thanks!!
The coconut milk whipped cream looks delicious! I’ll try that. Thank you for following my blog.
Thanks for your comment, and you’re welcome!!! 🙂
This recipe of coconut milk whipped cream looks delicious! I’ll definitely try that. Thank you for following my blog. I’ll go and see what other lovely recipes you have.
Thanks for stopping by! You really have to try this recipe – it’s soooo yummy! Celeste 🙂
Hi Celeste,
I was wondering if there’s a version of vegan whipped cream that doesn’t re-solidify upon refrigeration. In particular, (I am not a vegan) there is a cheesecake I really like which uses whipping cream mixed in with the cream cheese to give the cheesecake a fluffiness not present in other cheesecakes. My friend is vegan, and I want her to be able to try something similar, however I can’t find a recipe for whipped cream online that doesn’t re-solidify once chilled (which is a problem for this cake). Do you have any suggestions for a fluffy whipped cream that will mix well with the typical coconut oil/milk and not harden upon refrigeration? Thanks!
Thanks so much for your question! Unfortunately, I don’t have a great answer for you. I’ve only made coconut milk whipped cream twice now, so I don’t have a lot of experience with it. My blogger friend, Poppy from Bunny Kitchen, however; does a lot more baking and goodie making than I do. I bet she’d be able to help you out with this. Here’s a link to her blog: http://bunnykitchen.com/
Good luck!! Oh, and I’m sure your vegan friend really appreciates the effort you’re putting in to this (I would!). Have a great week! Celeste 🙂
