I still remember the day I first tasted freshly ground almond butter at Whole Foods. It was love at first bite! I’ve been eating it regularly ever since, but I’ve never baked with it. I saw Kristin’s Almond Butter Chocolate Chip Granola Bars this morning, however; and I knew I’d be baking with almond butter soon!
Wow I am up EARLY this morning – It’s 5am! I guess that’s what happens when you fall asleep at 8.
Also, I GOT A BIKE! I got this idea last week to ride a bike to work and have been pretty obsessed with making it happen. I feel like if you don’t act on ideas right away, you tend to forget about them. So I scoured craigslist for days and finally found a nice crosstrail bike. I’m in love. 🙂
I made these granola bars to give me some biking fuel and BOY did they ever. I picked up a cute, floral backpack from Target to stash my snacks in and I hit the trail early yesterday morning. Thanks so much for sharing this Celeste! I had a similar experience to yours. I had never been a big fan of peanut butter so fresh almond butter was a welcome change. I love baking with it because it’s so versatile – it can thicken things and hold ingredients together! 🙂
