6 Tempting Vegan Cupcake Recipes

Despite the fact that I’ve been successful with following a plant-strong diet, which doesn’t allow sugar, I still occasionally obsess over sweets. And right now, I’m obsessing.

Ever since checking out Bev’s Bakery yesterday I can’t stop thinking about cupcakes. If I distract myself, the craving will probably go away. But I’m not distracting myself! I just spent the last hour scouring the net for cupcake recipes, now I’m writing about them and baking will probably come next.

Oh well, I’m the first to admit that treating yourself once in a while is perfectly fine as long as you typically eat healthfully.

    You’re killing me here! The only sweets in my house last night were Ben & Jerry’s, M&M’s, and Cadbury eggs. (Hubby & son are not vegan…yet.) I would have given my left pinky toe for a vegan cupcake. I think I’ll be baking today.

    • It must be a challenge to be the only vegan in the house – I can’t imagine it! Hearing this makes me sooooo thankful that my husband went vegan with me. Did your hubby read the leaflet you passed out? Anyway, happy baking – you deserve a treat! Celeste:)

        He’s aware of the issues, and he has cut most of the meat from his diet, but he just doesn’t see animals as equal to humans. He also doesn’t like the labels of “vegan” or “vegetarian”.

    • You know, my husband and I started eating plant-based for health reasons. It was through this transition that I discovered and came onboard with animal rights issues. My husband, however; is still eating plant-based just for his health. It’s interesting how people can be exposed to the same information and have different reactions to it. Celeste:)

    Oh they all look fabulous! I wouldn’t be able to resist any of them if they were within arms reach!
    This week, I have been resisting baking Cherry Choc cupcakes. Ah, I bought a delicious one recently and I want to re-create it in my kitchen. Wish me luck….with resisting!

    • Who says you have to resist? You look healthy Ally, not like the kind of person who eats junk food all the time, so why not have a Cherry Chocolate cupcake or two! I hope you share the recipe – I love the cherry/chocolate combo. When I was a kiddo, my all time favorite candy bar was Cherry Mountain. They aren’t around anymore, which I suppose is a good thing since they weren’t vegan. Celeste:)
