We keep hearing how important vitamin D is for our health, so I wanted to share this post. Celeste:)

Mushrooms exposed to the sun can provide as much vitamin D as a supplement according to this study.

Recommendation: take the fungi out of their wrapping and leave them in the sun for 30 minutes.

Mushrooms transform ultraviolet light into the vitamin same as we do even after they have been plucked.

So go catch rays with your miatakes.

    Canned or raw white mushrooms are the only plant source of vitamin D, with four percent of that found in cow’s milk, though certain vegetables are high in calcium, which is important for bone strength and density. Try collard greens, sesame seeds, navy beans, kale, and tahini. Broccoli and almonds, while low in calcium, still contain roughly one-sixth the amount found in cow’s milk.

    Blackstrap molasses has approximately two-thirds the amount of calcium as a serving of dairy products, but if added to desserts instead of sugar, can make them a sweet source of this important nutrient. Adding it to gingerbread or cake recipes can be a good way for vegan children to get calcium.

    • Hi Anna! You’re always a wealth of knowledge girlfriend! Thanks so much for sharing this. And yea, you probably get plenty of vitamin D from your long morning walks. I wear sunscreen and a hat when I walk outside, so I probably don’t get enough vitamin D while I’m out. I have been eating a lot more mushrooms lately, however. I started doing this after reading Fuhrman’s ‘Eat to Live’ because he said they helped to promote longevity. Celeste:)

    On the topic of vitamin D there is an iPhone app called Dminder and you enter the amount of foods and supplements with vitamin D you take/eat on average daily. Then based on your GPS location, time of day, sun’s height, and amount of skin you have exposed it will tell you how long to be outside without SPF so you make enough vitamin D. It’s a pretty cool app!

    I didn’t know this about mushrooms I will take note and put them in the window before eating!
