Chewy Peanut Butter, Banana & Cranberry Cookies by Georgia Kate

On the plant-strong diet my husband and I are on, we’re not supposed to have sugar. But I’ve got a raging sweet tooth, so I cheat a little on this. I think this is okay. If I didn’t allow myself to enjoy soy mocha latte and a vegan dessert (or two) on the weekends, I’d probably give up this diet altogether.

Still, there’s a difference between allowing myself to have a little sugar and out-of-control binging, which is what I did the last time I made cookies (see A Cookie Conundrum). In fact, every time I make cookies I gorge until I get sick.

After my last over indulgence, I considered not making cookies anymore. For a minute or two anyway! I know I’ll make cookies again, but if I’m going to bake and binge, I can at least make it as healthy as possible. So I searched for wholesome cookie recipes today and found tons of them!

Six of the recipes sounded so yummy that I decided to share them. Some of them call for eggs, but you can easily veganize them by substituting flaxseeds. To do this, add 1 tablespoon of ground flaxseeds to 3 tablespoons of water and mix until gelatinous.

    I’m so flattered that you included one of my recipes in this post – thank you!! 🙂 And I’m right there with you, Celeste. My husband and I made the official switch to veganism after watching forks over knives, so we try to follow the plant strong diet as well! I did cut out all sugar and oil at the beginning – and I definitely understand WHY it’s that way in the diet – but like you, I have a sweet tooth. So I try my best to “healthify” my baking as well. Have you also cut out oil? I use it in small amounts here and there – it’s so useful in cooking sometimes!

    • How could I not include your cookies – I love carrot cake! I’m so glad to hear that you and your hubby are doing the plant-strong diet too. So few people follow it, that it’s nice to connect with other people who GET why I eat the way I do. I cut out all oil and sugar in the beginning too, but I’ve relaxed a bit on both. I rarely use oil when I’m cooking at home, but it’s impossible to avoid when you eat out (and my husband and I love to eat out!). The sugar is more of a challenge for me, but I’m pretty good about only eating it on the weekends. Thanks so much for your comment Kristin – I appreciate it! Celeste:)
