Pineapple-Banana Green Smoothie

My sister-in-law, Jeanne, is visiting from Boston this week, and we’re going to have a fab time touring SoCal and eating vegan. Don’t get me wrong, I’m not pushing my diet on her. Jeanne wants to go plant-based to lose weight and for her health. So while she’s here, I’m going to show her the ropes.

Jeanne arrived jet lagged and famished early this afternoon, so I made her a late lunch of Sweet No-Tuna Salad sammies, pita chips and a Pineapple-Banana Green Smoothie. Knowing that she hasn’t liked the green smoothies she’s made at home, I anxiously watched her sip the smoothie. I was relieved when her eyes lit up and she said, “This is really good!”

She liked the sandwich to, which puts us at 2 for 2. So be prepared Bill, it looks like your wife will be coming home vegan!

If you’re interested in making the Pineapple-Banana Green Smoothie, here’s the recipe:

Pineapple-Banana Green Smoothie

Ingredients

1 cup almond milk

1 banana

1 cup frozen pineapple

½ teaspoon vanilla extract

1 teaspoon unsweetened flaked coconut

1 handful spinach

Directions

Place all ingredients in a blender. Blend for 45 seconds or until desired consistency is reached.

Note: This recipe works best in a high-speed blender like a Vitamix.
